Cucumbers – they’re not just for salads or for dipping into hummus anymore. Have you tried slicing the green vegetables into flat squares to make breadless sandwiches? If not, now’s your chance! You’ll simply layer sliced cucumber with avocado, roasted red pepper and turkey to make fresh, crisp mini handhelds.

Ingredients
1 English cucumber
1 avocado
6 slices turkey
6 roasted red pepper slices
Avocado oil & sea salt kettle chips
Directions
- Cut cucumber into thirds widthwise. Stand each section upright and carefully slice lengthwise to make four or five 1/4-inch-thick slices per section. Discard outer slices with peel or save for another use.
- Spoon 1-2 Tbsp. avocado onto cucumber slice, then stack turkey and roasted pepper. Place another cucumber slice on top to complete sandwich. Repeat to make remaining sandwiches.
- Serve with potato chips for extra crunch.
