Beet & Roasted Garlic Hummus

Ingredients
- 2 medium beets cooked & peeled
- 5 garlic cloves unpeeled
- 1 15-oz. can chickpeas drained & rinsed
- 2 Tbsp. extra virgin olive oil or aquafaba
- 2 Tbsp. tahini
- 2 Tsbp. lemon juice
- 3/4 tsp. salt
- Black pepper to taste
- Black and white sesame seeds for garnish
- Fresh parsley for garnish
- Simple Mills Cracked Black Pepper Almond Flour Crackers for dipping
Instructions

Preheat oven to 400 degrees F. Line baking sheet with parchment paper.

On prepared baking sheet, arrange unpeeled garlic cloves evenly and bake for 20 minutes.

Unpeel garlic cloves and transfer to food processor or blender. Add beets, chickpeas, lemon juice, tahini, olive oil (or aquafaba) and salt. Process until smooth. Season with pepper to taste.

Spoon into serving bowl and garnish with chopped parsley and sesame seeds. Serve with Simple Mills Cracked Black Pepper Almond Flour Crackers and sliced veggies.

- Feel free to use precooked vacuum sealed beets to speed up the prepping process or simply wrap your unpeeled beets in foil and roast at 400 degrees F for 30-45 minutes or until fork tender. Peel and use as directed.
