Simple prep, fewer dishes — is there anything more appealing on a weeknight than a one-pan dinner? This one combines hearty sausages with spring peas, sliced carrots and red onion. As the sausages and vegetables roast, their flavors are infused with the beautiful spices in herbes de Provence. Have a lot of eager eaters? This recipe easily doubles.

Ingredients

Instructions

  1. Preheat oven to 400 degrees F.
  2. On sheet pan or cast iron pan, arrange sausages.
  3. Add vegetables and spread evenly. Spray vegetables with avocado oil. Sprinkle on salt, pepper and herbes de Provence.
  4. Bake 10 minutes; remove from oven, flip sausages and bake another 10 minutes.
