Chicken with Homemade Cranberry Sauce

Ingredients
For cranberry sauce:
- 2 cups fresh cranberries
- ⅔ cup water
- ⅓ cup orange juice with pulp
- 2 whole star anise
- ⅓ cup sugar
For chicken:
- 1 lb. chicken breasts
- 3 Tbsp. olive oil
- 1 Tbsp. white wine vinegar
- ¼ tsp. salt
- ⅛ tsp. black pepper
- ¼ tsp. herbs de Provence
Instructions

Preheat oven to 400°F. Marinate chicken in olive oil, vinegar and spices while oven is heating.

In medium saucepan, combine cranberries, water, orange juice, star anise and sugar. Bring to a boil. Remove from heat, stir and cover.

Cook chicken for 25-35 minutes until juices run clear and chicken reaches internal temperature of 165°F.

To serve, pour cranberry sauce over chicken or leave on side.
