Sliced and stacked on whole grain bread, this versatile veggie makes the perfect sandwich filler””tender and buttery, but hearty enough for bountiful bites. Top with fresh tomatoes and baby spinach, with a swipe of vegan mayonnaise for tangy flavor.

Avocado Sandwich

Serves 1

Ingredients

1/4 cup vegan mayonnaise
8 slices bread
1 cup fresh baby spinach
1 large avocado, peeled, pitted and sliced
1 large tomato, sliced
Sea salt and pepper, to taste

Directions

1. Spread vegan mayonnaise onto each slice of bread. Top with spinach, avocado and tomato slices. Sprinkle with sea salt and pepper.

2. Serve.
