Use your noodle. Avocado is more than just a chip dip, toast spread or egg boat. You can now think of it as a pasta mix-in. Okay, so avocado pasta salad may not be a ground-breaking revelation. But this is a mindlessly easy recipe to put together in a pinch – and especially smart for party-sized soirees. The best part: you can use almost any noodle you want.
Ingredients
8 oz. penne pasta
2 Persian cucumbers, sliced
2 avocados, chopped
1 yellow bell pepper, chopped
1/2 cup grape tomatoes, chopped
Dressing
1/3 cup garlic-infused olive oil
2 Tbsp. red wine vinegar
1 tsp. honey
1 tsp. Bragg Organic 24 Herbs & Spices Seasoning
Juice from 1/2 lemon
Directions
1. Cook pasta according to package directions. Drain and transfer to a large bowl to cool.
2. In a small bowl, combine all dressing ingredients until well incorporated.
3. Pour dressing over cooked pasta.
4. Add chopped vegetables and gently stir to combine.
