Ingredients
- 1/2 red apple finely chopped
- 2 cups rolled oats
- 4.2 oz. vegan butter softened
- 1 cup coconut sugar
- 1/3 cup apple butter fruit spread
- 1 tsp. vanilla extract
- 1 cup gluten-free flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
Instructions

Add softened vegan butter, coconut sugar, apple butter and vanilla to a large mixing bowl and mix until creamed and fluffy.

Add flour, baking powder, baking soda, cinnamon and nutmeg and fold with a spatula.

Add rolled oats and chopped apple pieces and mix to combine.

Cover bowl and refrigerate for 1 hour.

Preheat oven to 350 degrees F.

Divide cookie dough into 12 portions with medium cookie scoop and place on large baking sheet lined with parchment paper. Leave 2 inches between each cookie as they will spread.

Bake for 16-18 minutes until golden brown, then carefully use large cookie cutter to scoot around edges of cookies while they’re hot. This will give you neat, round cookies.

Let them sit on tray for 10 minutes, then transfer to wire rack to cool completely.
