Ingredients
- 16- oz. box Jovial Organic Einkorn Wheat Berries
- 3 Tbsp. Jovial Extra Virgin Olive Oil
- 1 lb. tomatoes chopped into 1/4-inch pieces
- 2 medium zucchini thinly sliced
- 1 cup loosely packed fresh basil leaves
- 1/4 medium red onion minced
- 1 tsp. capers minced
- 1 Tbsp. snipped chives
- 1-1/2 tsp. salt
Instructions

In large pot, bring 4-3/4 cups water to boil with 3/4 tsp. salt. Add wheat berries and simmer on low for 45 minutes.

Mix in 2 Tbsp. olive oil and transfer to large serving dish to cool.

Place chopped tomatoes in a colander with ½ tsp. salt, and let drain 15 minutes. Squeeze tomatoes to release remaining juice and add to wheat berries.

Add olive oil to medium pan on medium-low heat and sauté zucchini, basil and onion with salt, stirring constantly. Add zucchini to wheat berries.

Toss in capers and chives and stir until ingredients are distributed.

Serve at room temperature, chilled or reheated. Store in refrigerator up to 4 days.
