Ingredients

Instructions

  1. Preheat air fryer to 375 degrees F or 190 degrees C.
  2. In large bowl, combine sweet potatoes, cauliflower, Brussels sprouts and red onion.
  3. Drizzle oil and balsamic vinegar over vegetables. Add salt, garlic powder, rosemary and black pepper. Toss until vegetables are evenly coated with oil and seasoning.
  4. Spread vegetables in single layer in air fryer basket to ensure even cooking. You may need to work in batches.
  5. Cook 15-20 minutes, shaking basket halfway through to ensure they cook evenly. Vegetables should be tender and lightly caramelized. If needed, air fry an additional 3-5 minutes for extra crispiness.
  6. Once done, transfer roasted vegetables to a serving plate.
  7. Garnish with roasted cashews and pomegranate seeds before serving.
