Ingredients
- 1 medium-sized sweet potato cut into chunks
- 2 cups cauliflower florets
- 8 Brussels sprouts halved
- 1 large red onion peeled quartered, and separated
- 2 Tbsp. vegetable oil
- 2 Tbsp. balsamic vinegar
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. dried rosemary
- 1 tsp. black pepper
- 1/4 cup roasted and salted cashews for garnish
- 1/4 cup pomegranate seeds for garnish

Preheat air fryer to 375 degrees F or 190 degrees C.

In large bowl, combine sweet potatoes, cauliflower, Brussels sprouts and red onion.
