3-Layer Salted Caramel Protein Bars

It’s complicated. Your relationship with food, that is. There’s the velvety cheesecake you crave, but know it only causes trouble. Warm, creamy tomato soup, like your childhood best friend, is always there to comfort you. There’s hot and spicy curry, sparking your senses, testing your limits and maybe even causing a few tears. Your favorite protein bar, however, is a long-term commitment. It’s a reliable, daily standard that sometimes becomes boring and mundane. In that case, spice things up! This decadent, three-layer protein bar, with chocolate base and salted caramel filling, is just the date night you need to feel refreshed and rejuvenated.

Chocolate Caramel Bars

3-Layer Salted Caramel Protein Bars

Ingredients

Base

2 scoops Quest Chocolate Milkshake Protein Powder
½ cup Nutiva Coconut Flour
¼ cup Swerve Granular Erythritol
2 Tbsp. cacao or cocoa powder
1/8 tsp. cinnamon
1 cup 25 cal/cup Silk Cashew Milk
2 Tbsp. Sweet Spreads Chocolate Brownie Coconutter, melted
1/8 tsp. vanilla

Filling

2 scoops Quest Salted Caramel Protein Powder
¼ cup Swerve Granular Erythritol
2 Tbsp. Nutiva Coconut Flour
1/8 tsp. cinnamon
½ cup 25 cal/cup Silk Cashew Milk
2 Tbsp. Sweet Spreads Vanilla Cupcake Coconutter, melted
1/8 tsp. vanilla

Top

¼ cup Swerve Granular Erythritol
¼ cup Nutiva Coconut Flour
1/8 tsp. cinnamon
¾ cup Walden Farms Pancake Syrup
1/8 tsp. vanilla
1 Tbsp. almonds, chopped, for garnish
48 Lily’s Dark Chocolate Chips, for garnish

Directions

  1. Grease a large baking pan or line it with parchment paper.
  2. In a large bowl, combine all ingredients for the base. Set in fridge to chill.
  3. In a large bowl, combine all ingredients for the filling. Set in fridge to chill.
  4. In a large bowl, combine all ingredients for the top, except for the chocolate chips and almonds. Set in the fridge to chill.
  5. Scoop out an eighth of the base batter (about 1.5 ounces) and form into a bar and place on prepared pan. Scoop out an eighth of the filling batter (about 1 ounce) and place on top of base. Scoop out an eighth of the top batter (about 1 rounded tablespoon) and place on top of the middle layer.
  6. Repeat for the remainder of the batter, creating 8 bars with three layers each.
  7. Garnish each bar with chopped almonds and 6 chocolate chips.
  8. Chill in fridge until set.
